Note:  Paper (the material) is usually non-count.

For example, I need some paper for this project.

Also:  one sheet of paper, two pieces of paper, etc.

However, when talking about term papers (for instance, assignments in college courses) they can be count nouns.

Example:  I have three papers to write this semester.
